This cotton candy cake will consist of 3 layers and four different colors (blue, pink, purple, and green). You can change it to whatever colors that you want. First of all, you need to make a big bowl of batter by mixing the wet ingredients and dry ingredients. Turn your mixer onto medium speed and voila, the basic batter is ready.

The next step will be more exciting, split the batter into five different bowls. Drop the food color into the mixture. One-color for each bowl. Leave one bowl plain and mix them well. Let the batter rest while you prepare for the pan. By using the ice cream scoop, put the batter in the pan. One scoop of blue and then one scoop of pink then one scoop of purple and green. Make sure they don’t mix to one and another. Take a toothpick and put half of it inside the batter, move it in swirl pattern so you can see that the color is now forming the marble pattern. Now, it’s time to bake!

I know that you can’t wait to taste the cake, but you need to let it cool for 10 minutes. Take it out of the pan, and if you follow the step like what we exactly told you, you can have a layer of moist cake with a perfect marble pattern. Making the frosting is quite easy and need the same technique as the batter. After you make a big bowl of plain frosting, split it into five bowls, add food colors and leave one bowl plain.

To assemble the cake, you need to put a layer of cake in a flat area and make cake-plain frosting-cake-plain frosting-cake arrangement. The Cotton Candy Cake Recipe

The Cake

  • 2 1/4 cups all-purpose flour
  • 2 1/4 tsp baking powder
  • 3/4 tsp salt
  • 3/4 cup unsalted butter
  • 1 1/2 cup sugar
  • 3 large eggs
  • 1 1/2 tsp cotton candy extract
  • 1 cup of milk
  • food colors

Frosting

  • 6 egg whites
  • 1 1/2 cups granulated sugar
  • 2 cups unsalted butter
  • 1 tsp cotton candy extract

The Cake

  1. Preheat oven to 350 degrees and grease with butter.

  2. Mix flour, sugar, salt and baking powder in a large bowl.

  3. Partially, add eggs, cotton candy extract, and milk and turn the mixer to medium speed and mix it. Be careful, do not over mix.

  4. Add butter and mix.

  5. Split the batter into five bowls and die one purple, one green, one pink and one blue and one plain. Mix them well.

  6. Add on a scoop of each batter into the pan. Put half of a toothpick and move it swirl.

  7. Bake 18-20 minutes.

  8. Cool it for 10 minutes. Repeat step 6 to 8 for three times since wee need three layers of cake

Frosting

  1. Put white eggs into a mixing bowl and whisk.

  2. Place the bowl on a double boiler and whisk it for 3 minutes.

  3. Whisk it with mixer until stiff (5-8 minutes).

  4. Add cotton candy extract and mix until smooth.

  5. Add sugar powdered sugar and butter and whip it together.

  6. Split the batter into five bowls and die one purple, one green, one pink and one blue and one plain. Mix them well.

Assembling

  1. Place one layer of cake on a serving plate, pipe the plain frosting, and smooth it with a bench scraper. Chill for 20 minutes.

  2. Put another layer and repeat step 1.

  3. Splat the colored frosting on the top and side of the cake in a random pattern.

  4. Run the bench scraper along the sides and top to smooth the frosting and blend the color.

  5. Add cotton candy on the top of it along with any decoration that you want.
